Cheesy Mushroom Green Pepper Omelet (C1)

1/2 green pepper chopped
2 eggs
3/4 cup chopped mushrooms
1/2 onion minced
1 oz fat free cheddar cheese thinly sliced
Salt and pepper
1 tbsp olive oil

EVOO Skillet - Fry the mushrooms, green pepper and onions. Whisk the eggs together and sprinkle them with salt and pepper. Add the cheddar cheese and pour eggs over the mushrooms, green pepper and onions and cheddar cheese. Fry the omelette for a few minutes then flip over.
