Baked Apples A La Mode (C1)

The "a la mode" part of this is actually vanilla yogurt! This is great for breakfast or for a "sweets snack" during the day before the 8 hours before bedtime limit.  It's one of my favorites to make.


1 apple
½ tsp cinnamon
½ Lemon (juice only)
1-2 packets sweetener
3 Tbsp water
As needed olive oil

Core and slice the apple and place in a casserole dish. Drizzle with olive oil, sprinkle with cinnamon. Squeeze on lemon juice and sprinkle with sweetener. Add water.

Cover and bake at 350 for about 30 minutes OR microwave about 2 minutes or until soft. (Simmie microwaves this one....I'm too impatient to wait!)

If you put some vanilla yogurt on top, it tastes like an apple pie a la mode, almost. I use CarbMasters vanilla chai yogurt as the sugar levels are fairly low. If you're not using CarbMasters yogurt (a Kroger brand) and are going for vanilla yogurt, be very careful about the sugar levels in the yogurt -- when flavoring yogurts, a lot of time, sugar is added (which is discouraged on this diet).
