Ground Turkey Delight (C3)


I don't know about you, but I love casseroles! I make one large casserole and freeze everything but the current serving and voila! Meals for about one week for one person.

The Ground Turkey Delight sounds scrumptious, doesn't it? I'm going to make it this weekend!!!

Here is the list of revised ingredients so to make it 17 Day Diet compliant.  Make sure you go to the website above for the full instructions on how to put this together!

If you want to make this for C1 or C2, just replace the zucchini with some other vegetable; in C2, you could replace it with any number of squashes (but remember they are Natural Starches, so eating them for dinner would not be a good idea) or in C1, replace it with something like green beans or diced up eggplant; I tend to toss diced up bell peppers in just about everything baked and casserole-y that I make, so that's always a good addition as well.

8 oz greek yogurt with some dill weed in it (make it taste like sour cream)
1 Tbsp garlic powder
1/2 tsp black pepper
1 tsp salt
2 lbs ground turkey
1 cup chopped onions
4 cups chopped zucchini
1 can tomato paste
15 oz tomato sauce
8 oz cheddar cheese, shredded (fat free)
4 oz cream cheese, fat free

Calories: 272
Fat: 7.8 grams
Fiber: 3.9 grams
Protein: 28.5 grams
Carbs: 18.6 grams
Sugars: 11.5 grams
