Broccoli Soup (C1)


Broccoli Soup (C1)

Saute until all vegetables are soft except the broccoli:
broccoli
onions
garlic
mushrooms
spicy Cajun blend spice mix

Then add just enough water or broth to cover and simmer until just tender.

I used my stick blender and pureed it all, then added 1.5 Tbsp low-fat cream cheese and about 1/2 cup unsweetened almond milk.

Return to the heat and cook until the cheese is melted.

My personal choice: Add some cheddar cheese to the whole pot.

Other options:
Add extra roasted broccoli;
Add some salsa
