Carrot Cake Smoothie (C1)


Carrot Cake Smoothie (C1)

1 1/2 Cup Cooked Carrots
1 1/2 Cup Ice Cubes
1/2 cup water
1 tsp. orange zest
6 oz. (one serving size) Plain Yogurt
1/2 tsp Cinnamon
Dash Grated Nutmeg
1/4 cup Stevia
1 Serving Size Prunes Chopped (may be omitted if you don’t want to use Prunes as your fruit allowance)
1/2 tsp. Vanilla Extract

Throw everything except chopped prunes into blender and blend til smooth. Sprinkle chopped prunes on top of frozen smoothie and grab a straw and a spoon and enjoy!

Note from Becky:
You could add oats and some flour and turn this into muffins for C2.

  2. Hmmmm, I must have done something wrong because this did not turn out right. I couldn't figure out what 1/4 Stevia meant. Is it 1/4 cup? If so, that was my problem as I only used about 5 packets.

  3. Ahh yes, 1/4 cup (4 Tbsp) Stevia. Each packet contains 2 tsp I believe, so you used 10 tsp which is 3 1/3 Tbsp....so just a little bit more?

  4. I love your recipes but I have problem with portioning. If its 1 serving then it must be very huge -almost 4 cups or is it 2 servings?

  6. Nope, not huge, but it will keep you satisfied -- 1 serving. When it's blended, the carrots and ice cubes reduce down to much less than the original measurement.

  7. The texture is a little off-putting as carrots cannot be fully blended but the flavour is lovely :)
