1 package ground turkey
1 onion chopped
1 red pepper chopped
1-2 carrots chopped
1-2 teaspoons chipotle sauce
2 teaspoons cumin
1 teaspoon chili powder
1/2 teaspoon dried oregano
1 28 oz can crushed tomatoes
1 small can pinto beans drained
1 small can black beans drained
1 can red kidney beans drained
1 1/2 cup water
Kosher salt and pepper to taste
Put all the ingredients in your crockpot and stir well. Cook on low for 8 hours.
You can sauté the vegetables before and brown the meat before putting into the crockpot, but it is not necessary.
