Chorizo (C1)

Angela Scribner-Johnson



Oh my goodness! Angela's recipe for homemade chorizo sounds good and easy!


1 lb ground turkey
1 tsp salt
1 tsp pepper
1 Tbsp garlic
1 tsp oregano
1 tsp paprika
1 tsp onion powder
2 Tbsp chili powder
1 tsp ground cumin
1/2 cup water

Optional:
1 Tbsp crushed red pepper flakes
1/2 tsp cayenne powder

Cook it all together until done, then combine with your favorite veggies and fats! Yum!

BBQ Turkey Cutlets - Crockpot (C1)


Serves 6-8

1 lb turkey cutlets
Dark Agave equivalent to 1/4 cup molasses
1/4 cup apple cider vinegar
1/4 cup no sugar added or low carb ketchup
1 Tbsp chopped onion
2 artificial sweetener equivalent to 2 Tbsp brown sugar
1/4 tsp pepper

Combine all ingredients and place in your crockpot. Cook for 2-3 hours.

Taco Soup (C3)

1 pound ground beef or Turkey
1 envelope taco seasoning (check ingredients for sugar and high sodium)
1 can (11oz) whole kernel white corn,undrained
1 can (15 oz) pinto beans
1 can (15 oz) black beans
1 can (14 oz) diced tomatoes,undrained

Crushed tortilla chips, shredded cheese, whole wheat tortillas, warmed (all optional depending on cycle).  Watch the ingredients in the tortilla chips or make your own!

In cast iron skillet, cook meat over medium heat until no longer pink; drain. Stir in taco seasoning, corn, beans and tomatoes. Cover and simmer for 15 minutes or heated through, stirring occasionally.

Place tortilla chips in soup bowls; ladle soup over top. Sprinkle with cheese. Serve with tortillas. Yield 8 servings.

Italian Spaghetti Squash Casserole (C2)

Spaghetti Squash
1 lb ground turkey, lean
Marinara sauce
Italian Seasoning
Mushrooms

To make the spaghetti squash:
In the oven: Poke holes in the spaghetti squash and bake at 375 for 1 hour.
In the microwave: Cut spaghetti squash in half, put plastic wrap over the open side of the spaghetti squash and place, face-down, on a dinner plate that has about 1/4" of water in it, then microwave for about 10 minutes.

After cooking is done, remove the seeds and shred the spaghetti squash with a fork.

To make the casserole:
Cook turkey meat with your favorite spices.

Spray the bottom of baking pan then layer with spaghetti, meat, sauce, and 1 can of mushrooms. Bake at 350 for 30 minutes.

Greek Turkey Burgers (C1)

1 package of ground chicken or ground turkey
1 package (6-9 oz) fresh baby spinach
1/2 cup chopped roasted tomatoes or sundried tomatoes
3 cloves of crushed garlic
1/2 cup chopped sweet onion
1/4 to 1/2 cup Fat Free feta cheese
Cracked pepper to taste

Spray frying pan with cooking spray.

Place ground chicken or turkey in a bowl and set the bowl aside.

In the pan, saute the spinach. When done, remove from the pan and put it in the bowl with the ground chicken or turkey.

Saute onion and garlic and add to the bowl with chicken and spinach (let the onion/garlic mixture cool before adding to the bowl).

Then add the roasted tomatoes and pepper. When mixed thoroughly, add the feta cheese.

Make small patties and saute in your frying pan!!!

These are good for saving to use as snacks for in between meals hunger!

Breakfast Lasagna (C3)




Serves 6

This sounds really good! I cannot wait to make it this week.  Please note that when you look at the full recipe, it states it makes 4 servings.  If you cut it into 4 servings, then it is then a Cycle 3 recipe due to the amount of cream cheese per serving.  Personally, I think 6 servings in an 8x8 pan is plenty big.

  1. You will be using 4 complete recipes of the Cream Cheese pancakes which are HERE.
  2. Do not use the sausage links called for (store bought links have added sugar and a host of other items you do not want to be consuming).  Instead, use the Turkey Breakfast Sausage recipe listed HERE. You can use the Breakfast Sausage recipe as patties or just cook it up as crumbles.
Also, on the calorie count for both the cream cheese pancakes and this recipe, disregard what the website lists, as her calorie counts are not accurate in the few recipes I've checked (she's high on the calories).

Buffalo Balls (C1)



So easy to make, and just a couple of changes from the recipe makes this Cycle 1 compliant!!!

Modifications:

  1. Use fat free cream cheese
  2. Use fat free bleu cheese crumbles (or you could use fat free mozzarella also)
  3. Instead of the butter, use olive oil

Chicken Stuffed Mushroom Caps (C1)

1/4 cup chopped onion
3 Tbsp Liquid Eggs or Liquid Egg Whites
1 Tbsp Dijon mustard
1 1/2 tsp ginger
2 tsp reduced-sodium soy sauce
1 clove garlic, finely chopped
1/2 pound ground chicken
12 large mushrooms (not portobello large!)

Heat oven to 450. Spray baking sheet with nonstick cooking spray.

Mix all ingredients except mushrooms together well.

Fill mushroom caps with chicken mixture, then place mushrooms with the filled sides up, on your baking sheet.

Bake 7 to 10 minutes or until tops are light brown and chicken mixture is done.

Serve hot!

NOTE: This could also be done with ground turkey.

Turkey Hash - Crockpot (C2)

6 servings

1 lb ground turkey (as lean as possible)
6 oz brown rice
2 tsp chili powder
1 cup onions, diced
1 cup carrots, diced
2 cups canned crushed tomatoes (with the juice)
2 cups low sodium tomato sauce
1/4 tsp black pepper

Brown ground turkey in a skillet.

Transfer to your crockpot and add all the other ingredients and mix well.

Cook on high for 3 hours.

This is good to store for later use! You can add more tomato sauce to it to make it more like sloppy Joe's or whatever other ingredients you want to add.

Stuffed Peppers - Crockpot (C1)

4-5 bell peppers, seeded and halved
1 pound lean ground turkey
1 Tbsp olive oil
Mushrooms (1-2 cups, chopped, or as much as you like)
1 onion, chopped
4 cloves of chopped garlic
1 can diced tomatoes
8 oz can tomato sauce (or more, if desired)
Salsa
Fat Free mozzarella cheese

Brown the turkey with the olive oil, onion and garlic. Add mushrooms and cook until they are soft. Add diced tomatoes and ½ cup of salsa. Heat through.

Coat slow cooker with cooking spray. Stuff peppers and place in cooker. Top with tomato sauce and more salsa. Cover and cook on low 6-8 hours, or until peppers reach the consistency you prefer. Serve topped with cheese.

This can also be baked in the oven: Bake at 350 for 50 minutes. Remove from oven and top with fat free mozzarella. Bake 10 more minutes until cheese melts.

Notes:
Get creative with your vegetables when stuffing this! You can use carrots, or other variations.

Krista's Easy Turkey Meatloaf (C1)

1 lb ground turkey
1/2 cup shredded carrots
1 Tbsp crushed garlic
2 Tbsp dried basil
1 tsp mustard
pepper to taste
1/4 tsp Worcestershire sauce
1 tsp oregano
1 1/2 Tbsp steak sauce
1 egg white
2 Tbsp flaxseed meal

Cook at 350 for 30 minutes. Reduce heat to 300 and cook additional 15 minutes if needed.

Note: Double-check the ingredients on your steak sauce -- some have sugar added to them.

Sweet Italian Sausage (C3)

1 lb turkey
2 tsp basil
1 1/2 tsp Agave Nectar
1 tsp fennel seed
1 tsp black pepper
1/2 tsp red pepper
1 tsp garlic
1/8 tsp of cloves
1/8 tsp nutmeg
1/8 tsp sage

Combine all ingredients well, form into patties and either cook on your stovetop or bake, then enjoy!

Crockpot Chili (C3)

1 package ground turkey
1 onion chopped
1 red pepper chopped
1-2 carrots chopped
1-2 teaspoons chipotle sauce
2 teaspoons cumin
1 teaspoon chili powder
1/2 teaspoon dried oregano
1 28 oz can crushed tomatoes
1 small can pinto beans drained
1 small can black beans drained
1 can red kidney beans drained
1 1/2 cup water
Kosher salt and pepper to taste

Put all the ingredients in your crockpot and stir well.  Cook on low for 8 hours.

You can sauté the vegetables before and brown the meat before putting into the crockpot, but it is not necessary.

Brittany's Taco Soup (C2)

This is perfect for freezing portions ahead of time for 
those of you out there that are too busy to cook every day!

1 can of black beans
1 can of red kidney beans
1 can of pinto beans (sometimes I use other kinds of beans as well)
3 cans of crushed tomatoes (See Note 1 below for C3)
1 can of corn
1 pound of ground turkey
half diced onion
1 packet of taco seasoning
1 packet of ranch seasoning
Any additional vegetables you like such as diced bell peppers, etc.

Sauté onion with the ground turkey and season your meat the way you enjoy it.

When cooked all the way, transfer it to a large pot with the other ingredients!

Do not drain any of the cans. Bring to a boil and then turn down the heat to low and simmer covered for at least an hour and a half (the longer it simmers, the tastier it gets!).

You can top it with fat free sour cream (1-2 Tbsp per serving), fat free cheddar cheese (1-2 Tbsp per serving) and avocado (if this is not your first time through C2).

This is one of those recipes that tastes better the next day!


C3 note:
In C3, you can use Rotel canned tomatoes (which have chiles in them)

In C2, this is not a dinner recipe due to the starches.  In C3, it's your choice whether to eat this later in the day.

The ENTIRE recipe contains:
12 starch servings (assuming three 1/2 cup servings per can on the beans and corn)

Crockpot Smoked Turkey Breast (C1)

Turkey breast, remove all skin and fat
1 large onion, sliced
3-4 Tbsp BBQ sauce, low sugar (or sugar-free if you can find it)
2 Tbsp liquid smoke
1/4 c water
Garlic powder ( I like lots)
Salt and pepper to taste

Spray crock pot with Pam, put on high setting.

Put 1/2 onion on bottom.

Mix BBQ sauce, liquid smoke, and water.

Pat turkey dry, season breast side salt, pepper and garlic powder. Drizzle 1/2 of BBQ sauce to coat. Place in crock pot breast side down. Put remaining onions in cavity and a few on top. Season with seasonings, drizzle remaining sauce on top, spread it to coat.
Cover tightly with tin foil if lid won't fit. Cook on high for 1 hour, then on low til done all the way thru.

Remove from crock pot, discard liquid, remove bones and slice.

Serious Goodness Casserole (C1)

Number of Servings    8-9

In a large pan on your stovetop: brown the following
2 lbs lean ground turkey
1 large onion chopped (I use my Ninja to accomplish this)
2-3 green bell peppers, diced
1 can (13.25 oz) mushrooms (or fresh mushrooms)
Garlic, garlic, and more garlic! I didn’t have any fresh, so I used garlic chips today (optional)
Crushed peppers (hot) to taste!

In a separate pan, sauté the coleslaw mix until it is tender and has cooked down in volume. Generally this will take 5 minutes or less, depending on how high the heat is turned up on your stovetop. Make sure to use some olive oil in your pan to prevent sticking.

Drain the liquid out of the ground turkey mixture.

Add to the ground turkey mixture the following and mix well:
1 can (24 oz) Salsa (recipe calls for 38 oz, but I like a little bit less liquid)
2 tsp chili powder
1/3 cup soy sauce
1 bag of coleslaw mix (16 oz bag)
5 cups spinach (optional) – reduced down by your food processor, blender, or hand chopping small, to about 2 cups. Add this at the very end of mixing.

Place the mixture in a baking dish (I use a large one) and bake at 350 for 15-20 minutes.

Notes:

I don’t like salsa. Do I have to use it?
I have made this using marinara sauce and it is a nice dish, with the flavor being more on the sweet side due to the marinara, rather than spicy when using the salsa.

Can I use different vegetables in this casserole?
You can add any number of other vegetables to this as well – I’ve made it with green beans; asparagus doesn’t work very well as they got a bit soggy.  In C3, adding zucchini or squash to it is a nice way to bulk it up. Using broccoli slaw instead of coleslaw will give it more “oomph.”  Definitely more filling—not that it needs to be.

Can I freeze the portions I don’t use right away?
This freezes really well.  When reheating, I sauté more coleslaw and use that underneath the casserole and put the casserole meat dish on top.

Today’s casserole was made with less liquid in terms of salsa or tomatoes; the original called for 38 ounces and that was just a little bit too much liquid for my tastes.

Meatloaf Muffins (C1)

These were made using a square muffin tin pan that accommodates 12 muffins!

Number of Servings 12

2 lbs. ground turkey (this cooks down to 75% depending on the fat content)
1 egg        
Low sugar marinara sauce or salsa
3 Tbsp Flaxseed meal
4 Tbsp Parmesan cheese, shredded (I use the parm cheese in the shaker can)
1 tsp Onion powder
1 tsp Garlic powder
Crushed garlic (optional)
½ tsp Sage
To taste Onion flakes or minced
Mushrooms (optional)
     
Combine all ingredients except the marinara sauce and mix well. Add enough marinara to make the mixture just a little on the “wet”: side. With the mushrooms and squash, I ran both through about three pulses of my Ninja food processor before adding to the rest of the ingredients.

Place an even amount of the mixture into 12 muffin tins and bake at 350 for about 25-30 minutes. If you are going to freeze some of them, I'd bake for 25 minutes; then once they're defrosted and reheated, they will be the perfect texture and moisture level.

After removing from the oven, let it sit for 10-15 minutes before serving.

On the ground turkey, you will wind up with about 75% of the 2 lbs. of turkey after baking.  For lean ground chicken, you’ll wind up with about 85% after baking.

Meatloaf Peppers (C1)

1 lb Ground Turkey
1 Tbsp Worchestershire sauce
1 tsp Onion powder
1 tsp garlic powder
1/2 tsp sage
3-4 oz cubes Low Fat Feta Cheese
1 med. chopped onion
Handful chopped spinach
1 egg
1 cup heinz chili sauce
1 Tbsp red pepper chili flakes

After combining all the ingredients above, stuff the mixture into bell pepper halves..

Top with heinz chilli sauce and sprinkle with feta.

Bake @ 350 for 45 minutes.

Enjoy!!!

Keep this recipe in a safe place!!!
