Liquid Smoke Chicken (C1)

Prep Time: 15 minutes

2/3 cup Olive oil
2/3 cup reduced-sodium soy sauce
1/3 cup lemon juice
2 Tbsp Liquid Smoke
2 Tbsp spicy brown mustard
2 tsp Ground black pepper
2 tsp Garlic powder
Chicken breasts, skinless

In a large bowl, mix the olive oil, soy sauce, lemon juice, liquid smoke, mustard, pepper and garlic powder.

Cover and allow chicken to marinate a maximum of 4 hours in the refrigerator. Do NOT marinade MORE THAN 4 hours, as after 4 hours, the lemon juice will begin to cook the chicken.

This marinade works well for 4 chicken breasts that are skinless and boneless.

It is best used for chicken that will be grilled but can be used for chicken that is going to be baked.

Simply put your grill on high heat, put the chicken on the grill and cook 6 to 8 minutes on each side – until juices run clear.  When baking, a 350 oven for 30 minutes does it!

Discard the marinade once the chicken is on the grill.

The outcome of this recipe? The chicken turns a beautiful caramel color which makes a great presentation.
