Almond Milk (C3)

Against All Grain

I absolutely love a good glass of almond milk.  But finding it without carageenan is next to impossible (but still possible!).

But Danielle of the Against All Grain website, has a great recipe!

Sweet Potato Protein Smoothie (C3)

1/2 cup sweet potato, boiled, and cooled.
6 oz. plain nonfat Greek yogurt
Cinnamon
1 scoop vanilla protein powder
1 Tbsp sugar free butterscotch pudding mix
1/2 cup unsweetened almond milk
A handful of ice

Mix everything together in your blender and blend away! Then enjoy the heck out of this recipe!

Sabine's Digestive Cocktail (C3)

Little digestive cocktail, C1 style:

40 g prunes
1 cup unsweetened almond milk
1 Tbsp ground flaxseed
2 Tbsp sf/ff chocolate Jell-o powder
1 tsp vanilla extract

Mix in food processor until prunes are shredded and nuke in microwave (2 x 1 min) to thicken the pudding.

Carrot Cake Smoothie (C1)

1 1/2 Cup Cooked Carrots
1 1/2 Cup Ice Cubes
1/2 cup water
1 tsp. orange zest
6 oz. (one serving size) Plain Yogurt
1/2 tsp Cinnamon
Dash Grated Nutmeg
1/4 cup Stevia
1 Serving Size Prunes Chopped (may be omitted if you don’t want to use Prunes as your fruit allowance)
1/2 tsp. Vanilla Extract

Throw everything except chopped prunes into blender and blend til smooth. Sprinkle chopped prunes on top of frozen smoothie and grab a straw and a spoon and enjoy!

Note from Becky:
You could add oats and some flour and turn this into muffins for C2.

Pumpkin Spice Latte (C3)

Strong brewed coffee or espresso (I used strong brewed coffee)
1 cup Unsweetened Vanilla Almond Milk
2 - 4 Tbsp canned pumpkin (I used 4, original recipe calls for 2)
1/2 Tbsp Stevia

Whisk ingredients in saucepan over medium heat, constantly stirring until steaming.

Remove from heat and add:

1 Tbsp Vanilla extract
1/2 to 1 tsp pumpkin pie spice (personal taste here, I added 1)

Whisk really well

Pour into a large mug and top with coffee or espresso.

NOTE: With the pumpkin this is a C2 recipe, I'm still looking for SF Torani pumpkin syrup.

Chocolate Strawberry Cheesecake Snack (C3)

Combine the following ingredients and blend well, then enjoy!!!

Unsweetened chocolate almond milk
Strawberry whey protein powder
2 Tbsp fat free cream cheese

This tastes like chocolate-strawberry cheesecake!

Note: Almond Breeze makes the unsweetened chocolate almond milk (in case you're not sure what brand to look for).  That I'm aware of, that's the only brand of the unsweetened that's chocolate as well.

Apple Pie a la Mode Shake (C3)

Recipe Author: Susan Bojarzin

3/4 cup Greek plain ff yogurt
1 cup unsweetened vanilla almond milk
1 scoop vanilla whey protein powder (optional)
1-2 drops vanilla
1 individual serving size unsweetened apple sauce
Heavy sprinkling of cinnamon
Small sprinkling of nutmeg.

Whip everything together.

Delicious!

My daughter even suggested heating for a yummy winter drink! I hope you all enjoy!

Iced Coffee with Chocolate and Vanilla (C3)

1/4 cup unsweetened almond milk
1.5 cup cold coffee
1 packet stevia (equivalent of 2 tsp sugar)
ice
1/2 scoop-1 scoop vanilla protein powder
1 vanilla yogurt (6 ounces CarbMasters)
1 Tbsp choc syrup (or you could use the caramel syrup)

Directions:

Use your blender for this, sit back, kick up your feet and enjoy!!!

Green Monster Smoothie (C3)

1 banana, roughly chopped (this is C3)
4 or 5 strawberries
1/2 cup fresh blueberries
1 small peach, peeled and roughly chopped
1 heaping cup (or more) fresh spinach leaves, thoroughly rinsed
splash vanilla soy milk
1 tablespoon Greek yogurt
Agave Nectar to equal 2 teaspoons honey
1/2 cup crushed ice

Place all ingredients in a blender and blend until smooth. Serve immediately.
*this recipe makes a very large smoothie- two could easily share.

Simmie's Notes:
If you use all the fruit mentioned above, you could wind up with about 1/4 of a fruit beyond the 2 permitted on this diet.  What I'd recommend in C3 if you're choosing to use the banana, is to cut back a little bit on one of the other fruits or not worry about going over by 1/4 of a fruit once in a while.

Green Cheesecake Smoothie (C3)

1 cup Kefir or 6 ounces of nonfat plain yogurt
1 scoop vanilla whey protein powder
A little less than 1 Tbsp sugar-free pudding powder, flavor: cheesecake
1 cup baby spinach

Blend the above well; you may have to shake it a bit to get the last of the spinach to circulate down to the blades (depends on the size of your blender; I use one that's for an individual portion).

After everything is blended, throw in a few handfuls of crushed ice and blend again -- this is what makes it thick and creamy.  The amount of ice you put in determines how thick your smoothie will be.

Notes:

  • This is a great way to get vegetables in!  The spinach absolutely does NOT affect the taste of the smoothie at all -- surprisingly!
  • Technically, the pudding powder is “in later cycles” per Dr. Mike, but we believe that to mean a full serving of pudding. 1 Tbsp of the powder is a very small amount and would not be considered one serving.

Fruity Chocolate Smoothie (C2)

Combine the following in your blender and enjoy!


1 cup plain Kiefer

1 tablespoon agave nectar (or sweetener of your choice)

1 scoop vanilla whey protein powder

1/2 to 1 cup frozen raspberries

3 tablespoons raw or regular cocoa powder

Yogurt, Fruit and Almond Milk Smoothie (C3)

CarbMaster (Kroeger brand) vanilla yogurt (these come in 6 ounce individual containers)
3/4 cup unsweetened almond milk
1 cup frozen no sugar added mixed fruit
1 Tbsp EVOO
1 scoop vanilla whey protein powder

Combine the above in a blender for a great way to start your day! If you want it thicker, add a handful or two of crushed ice.

This will bring you to about 399 calories if you use Jay Robb protein powder; if you some of the others such as Body Fortress, the total would be around 430 or so -- this is a great addition for those who are having trouble meeting the minimum calorie intake for C1 of 1,200.

Strawberry Banana Smoothie (C3)

1 cup Kefir (or 6 ounces plain yogurt)
1 Tbsp sugar-free strawberry preserves (or 1 cup fresh strawberries)
1 Tbsp sugar-free Jello Banana Cream pudding mix
1 scoop vanilla whey protein powder
Stevia Extract to taste
A couple of handfuls of crushed ice

Simply combine all the above ingredients and blend in your blender.

If you're eating this after 2 pm or closer to your bedtime than 8 hours, use the preserves; if not, you have the choice of using the fresh strawberries.

In C3, you can use 1 fresh banana instead of the pudding mix.

Pumpkin Pie Smoothie (C2)

1 container fat free plain Greek yogurt
1/2 cup pumpkin
1/4 teaspoon pumpkin pie spice
1 teaspoon truvia
6 cubes ice

Combine all ingredients and blend in your favorite blender.

Chocolate Strawberry Smoothie (C1)

1 cup frozen strawberries
2 tablespoons unsweetened dark coco
2 teaspoons truvia

Combine the above ingredients into a blender and enjoy once well blended!

Tropical Smoothie (C3)

1 cup kefir
4 frozen strawberries
4 frozen chunks of pineapple
4 frozen chunks of mango
1/2 frozen banana
1 teaspoon truvia

Combine all ingredients together and blend away!

Chocolate Milkshake (C3)

1/2 cup yogurt (I did vanilla because that's what I had)
1 - 1 1/2 tbsp sugar free chocolate pudding powder
1c crushed ice (may need more depending I think I added more)
1/2 scoop vanilla whey powder (again didn't have chocolate whey so I used vanilla)
1 cup unsweetened almond milk

Blend well
The consistency, the flavor, everything was great....to me it tastes like a devils food cake shake!

Creamsicle Smoothie (C3)

Do any of you remember the creamsicle ice cream bars that were so good in the summertime? This tastes just like that, only as a Smoothie!

Combine the following ingredients and blend away:

1 cup Kefir (or yogurt; if you use yogurt, I'd recommend 1 Tbsp olive oil to make it more liquid of a texture)
1 scoop vanilla whey protein powder
A little less than 1 Tablespoon of sugar-free orange jello (powder ONLY!)
A handful or two of crushed ice cubes

Breakfast Smoothie (C2)

A great smoothie to go along with your breakfast!  Shown below, this comes to 460; if you eliminate the oil, it's 400 calories.

3/4 cup Kefir (or yogurt)
2 cups blueberries (I use frozen)
1 Tbsp flaxseed meal
1 scoop vanilla whey protein powder
1/2 Tbsp olive oil (optional)

I use frozen blueberries and microwave them just a bit -- about 1.5 minutes, to soften them from being rock hard when blending them.

Put all the ingredients in your blender and let it go!

What you wind up with is a thick smoothie.  If you use yogurt, I'd recommend using some oil to give it a creamier consistency.

This is both of your fruit servings for the day; obviously, you can make this with only 1 cup of blueberries and save your other fruit serving for later.
