Creamy Egg Salad (C1)

3 eggs (only 1 yolk)
1-2 Tbsp fat free cream cheese
1 tsp white vinegar
1 tsp acidophilus milk
Salt to taste

Combine all ingredients and enjoy!

Ricotta Salad Dressing (C3)


Makes about 1 cup of dressing

3/4 cup nonfat ricotta cheese
1/4 cup finely chopped onion
1/4 cup lowfat buttermilk
2 Tbsp chopped chives
1 Tbsp sherry vinegar or cider vinegar
1/2 tsp salt
1/4 tsp pepper

Mix all ingredients with a fork or wire whisk. Store in refrigerator.

Cheesy Tuna Salad (C3)

Lettuce
1 can tuna, drained
Hard boiled egg, cut into quarters
Balsamic Vinaigrette dressing
Mini Bell peppers
2 String cheese sticks

To make the stuffed mini bell peppers: cut 2 string cheese sticks in thirds and freeze them.  Stuff the mini bell peppers with one of the pieces of cut string cheese and bake at 375 for 15-20 minutes.

Assemble the salad and pour some of your salad dressing over it.

How good does this look? I want some!

Curried Spaghetti Squash Salad (C3)


Serves 6

1 medium spaghetti squash
1/2 cup lowfat or nonfat buttermilk
2 Tbsp lime juice
1 Tbsp Dijon mustard
1 tsp curry powder
1/4 cup chopped peeled pear
1/4 cup finely chopped onion
2 Tbsp chopped green onions
3 cups shredded lettuce

Heat oven to 400. Cut squash into halves and place cut sides down in ungreased rectangular baking dish. Pour water into dish to 1/4" deep.

Cover and bake 30-40 minutes or until tender.

Remove strands with two forks.

Mix buttermilk, lime juice, mustard, curry powder and pepper in large glass or plastic bowl.

Add squash strands, pear, onion and green onions; toss.

Cover and refrigerate about 2 hours or until chilled.

Serve on a bed of lettuce.

Tofu Basil Salad Dressing (C3)

Adapted from Morinu website

Makes 1 cup of salad dressing

1 package Firm Tofu - Firm
2 Tbsp. cider vinegar
2 Tbsp. apple or orange juice
1/2 tsp. Dijon mustard
1 clove garlic, minced
2 Tbsp. fresh basil, chopped
1/2 tsp. salt

Place all ingredients in a blender or a food processor and puree until smooth. Cover and refrigerate. Will keep in refrigerator for about a week.

Chinese Un-Chicken Salad (C3)

Adapted from Morinu website


1 package Extra firm, frozen & defrosted Tofu

Marinade: 
1/2 cup vegetarian chicken broth, boiling  (see note below)
1 Tbsp. low sodium soy sauce
1/2 Tbsp. red wine vinegar
1-1/2 tsp. granulated garlic

Salad: 
2 cups loosely packed shredded cabbage
1/2 cup Mandarin orange sections, drained
1/2 each red and yellow bell pepper, sliced into thin strips
1/3 cup frozen green peas, cooked
1/2 cup water chestnuts, drained
2 Tbsp. chopped fresh cilantro  (optional)

Dressing: 
3 Tbsp. rice vinegar
2 Tbsp. lite sodium soy sauce
1 Tbsp. sesame oil
1/2 tsp. ground ginger
1 clove garlic, minced
2 Tbsp. thinly sliced scallions

Tear defrosted tofu into unequal pieces and place in a non-reactive bowl. Combine the marinade ingredients in a small liquid measuring cup and pour over defrosted tofu. Cover and refrigerate up to 3 hours.

Drain tofu and return to microwave safe bowl. Cover and cook on full power for 3 minutes, drain thoroughly, pressing gently, and set aside.

Place salad ingredients, except tofu, in a medium bowl and set aside.

Using a wire whisk, mix together the dressing ingredients in a small liquid measuring cup, and set aside.

Toss salad ingredients, top with tofu and cilantro, pour dressing over all and serve immediately.


NOTE:
Vegetarian chicken broth: You could just as easily use vegetable broth, unless you need the flavor of the chicken.

Celery Seed Salad Dressing (C3)



This sounds both easy and yummy!

This is a great C3 recipe for salad dressing.

MODIFICATION NEEDED: The only change that you need to make is to substitute some sugar replacement for the sugar called for in the recipe.

Seafood Salad (C2)

3 scallops
1 serving shrimp
1-2 tsp olive oil
Spinach for 1
Tomato
Parmesan Cheese


Cook the shrimp in 1-2 tsp of olive oil.  When it is almost done, top with spinach, cover and cook 1-2 more minutes.

Turn upside down onto your dinner plate, add a tomato and a sprinkling of parmesan cheese.

A side of cottage cheese adds a nice flavor to it as well!

Mint Vinaigrette Dressing (C1)

Recipe Author: 17 Day Diet Community Administrator

1/4 cup white vinegar
1 Tbsp lemon juice
Sweetener equivalent to 1/3 cup sugar
1/4 cup minced fresh mint
1/4 tsp salt
1/8 tsp pepper

Combine all ingredients and mix well.  Refrigerate for at least two hours to let the flavors blend well.

This is a great dressing for a salad that's got some chicken and fruit in it (peaches are great with this dressing in a salad).

Garlicked Balsamic Vinegar & Oil Dressing (C1)

Balsamic Vinegar
Olive Oil
Minced Garlic

A nice variation is to add a little bit of strawberry or raspberry preserves to this.

Tex Mex Dressing (C3)

1 garlic clove, minced
2 tablespoons fresh cilantro, finely chopped
1 teaspoon jalapeno, minced
1/4 cup fresh lime juice, and or some lemon
2 tablespoons olive oil
2 tablespoons agave, or some stevia to taste

Combine all ingredients and enjoy!

Asian Dressing (C1)

1/3 cup olive oil
3 Tablespoons balsamic vinegar
2 teaspoons low sodium soy sauce
2 teaspoons agave, or half packet of stevia
pinch of dried ginger
1 tsp minced garlic

Combine all ingredients and enjoy!

Sweet Orange Balsamic Salad Dressing (C3)

2/3 cup balsamic vinegar
1/3 cup squeezed orange with some zest
2 tablespoons olive oil
2 tablespoons chopped fresh cilantro
1 tablespoon Dijon mustard
2 teaspoons minced garlic
1 teaspoon agave, optional, or a bit of Stevia for added sweetness

Combine the above and refrigerate to chill before using.

Egg Salad with Avocado and Spinach (C3)

This is a great egg salad recipe with a twist! Click HERE for the full recipe.

This is C1 without the bread and avocado: use either lettuce leaves or a bell pepper cut in half lengthwise instead of the bread, and a little extra yogurt instead of the avocado.


Note:  Make sure the yogurt you use in this is compliant with the types permitted--keep the sugars to 10 grams or less per 6 ounce serving and low fat, no added sugars.

Broccoli & Grape Salad (C3)

Note: This needs to be consumed at least 8 hours before you go to the bed due to the grapes!

Fresh broccoli (cut up into small pieces)
Red onion chopped
Red grapes (if they are small I just put in whole but if they are large I cut them in half)
Small amount of crumbled turkey bacon (~ 1/2 Tbsp)

Combine the above in a bowl and set aside.

DRESSING:
Walden Farms zero calorie mayonnaise
Splash of vinegar
1 pkg Stevia

Pour dressing over broccoli salad, mix well and refrigerate for an hour to let the flavors set.  Then ENJOY!

Carrot Salad (C3)

6 cups shredded carrots
1 cup fat free greek yogurt
3 Tbsp apple cider vinegar
3-4 pkts stevia (or to taste)
1 apple, chopped for C1
1 cup unsweetened pineapple (C3)


Combine all ingredients and refrigerate, then enjoy!!!

Cheeseburger Salad (C1)

Ground turkey
Ketchup, reduced-sugar (3/4 to 1 cup per 2 lbs meat)
2 Tbsp Mustard
Lettuce
Diced Tomatoes
Red Onion
Shredded Cheese
Diced Pickles or sugar-free relish (optional)

Brown ground turkey, rinse and drain. If you want to make this for C2, lean hamburger meat would be an option as well.

To put it together, it's a bed of lettuce, add meat mixture, top with diced tomatos, red onion, shredded cheese, (diced pickles or sugar free relish optional).

This is good to make ahead of time and keep in your refrigerator!
