Ricotta Salad Dressing (C3)

Makes about 1 cup of dressing

3/4 cup nonfat ricotta cheese
1/4 cup finely chopped onion
1/4 cup lowfat buttermilk
2 Tbsp chopped chives
1 Tbsp sherry vinegar or cider vinegar
1/2 tsp salt
1/4 tsp pepper

Mix all ingredients with a fork or wire whisk. Store in refrigerator.
