Turkey Sloppy Joe's (C3)

1 tsp olive oil
1 lb lean ground turkey
1 onion diced
1 carrot diced
1 bell pepper diced
2 garlic cloves minced
1/2 cup sugar free ketchup
1 tbsp chili powder
2 tsp Worcestershire sauce
pepper to taste
Whole Wheat Hamburger Buns

Saute turkey, onion, bell pepper, carrot and garlic in oil until the turkey is cooked and the onions are soft. Add ketchup, chili powder and Worcestershire. Stir and simmer 15 min. Serve on whole wheat buns. Makes 4. My kids like a little cheddar sprinked on top.

  1. thanks for this! My son loves sloppy joes, so this could be a healthier alternative for all of us. Are the buns what makes it C3? If I skip the buns and use lettuce wraps, does that make it C1/C2 friendly? Or is the ketchup a problem, too?

  2. Yes, if you change it and don't use bread, then it would be a C1 and C2 recipe. What I've started doing for myself for things like this is to fry up some coleslaw using a little bit of oil and some minced garlic, then mix it in with whatever I've made -- or in this case, you could just put the sloppy joe mixture on top for yourself.
