Not-So-Souffle Carrot Muffin (C2)

100 g carrots (3.5 ounces)
1 scoop chocolate whey protein powder
2 eggs
1 oz unsweetened applesauce
4 tbsp ground flaxseed
40 g dried pitted prunes (= 6 small prunes or 4 large)
Sweetener equivalent to 4 Tbsp sugar (Sabine uses Splenda as it bakes better than some of the other sweeteners)
1.5 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
1 tsp cardamom

Preheat oven to 350 F. Separate the eggs, beat egg whites into peaks.

In a food processor chop carrots, then add in egg yolks, and all other ingredients. Mix well. Fold beaten egg whites into mixture. Divide batter into muffin tin (makes 12 large). Bake for about 20 mins.

I've used paper cups this time, which double as a kind of exo-skeleton. Very handy ;) I like those better than the Mark I, because they're not as squishy. Also, the prunes work really well!
