Cheese, Vegetable and Quinoa Bites (C2)

This sounds wonderful! Great for leftovers of quinoa and vegetables.

I'd revise the ingredients to use part-skim mozzarella or parmesan cheese instead of the cheddar cheese.  You could use the fat free cheddar (if you can tolerate the taste -- I can't).
