Crack 2 eggs into a quart-sized ziploc bag (not more than 2 eggs).  Shake to combine them.

Add your favorite ingredients: onions, green peppers, tomatoes, mushrooms, salsa, etc. to the bag and shake to mix them well.

Make sure to get the air out of the bag and zip it up.

Place the bag(s) into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot if you are cooking for more people. If you have more omelets, make another pot of boiling water.

Open the bags and the omelet will roll out easily.

This is nice to serve with fresh fruit.

Imagine having these ready the night before, and putting the bag in boiling water while you get ready. And in just 13 minutes you have a nice omelet for a quick breakfast. If you ready

these the night before, wait to add any mushrooms you may want until morning. Tomato or onion will turn them black over night.
