Submitting Recipes to this blog


Do you have a recipe that you would like to see added to this blog?

We'd love to hear from you about your favorite recipes!

Guidelines:

  1. Original recipes are welcome! We give credit to all recipe authors on this blog.
  2. If the recipe is not an original, please submit the link to where it is online or where you found it -- let us know that it is not an original and we will try and track down the link.
  3. If you've adapted a recipe to be compliant with the 17 Day Diet, please let us know the link to the original recipe so that we can give the original author credit, as well as you for modifications.
How to:

  1. Banana Muffins, cycle 3
    1 1/2 cup oats
    2 very ripe bananas
    1/2 c sugar free applesauce
    1 tsp baking soda
    Dash salt
    1/3 cup liquid egg whites
    2-3 tbsp stevia

    Preheat oven to 375 F. Line muffin pan with liners. (My batch made 7 muffins). Grind up oats in a blender (I use a Ninja) until they resemble flour. In a medium sized bowl mash bananas then add applesauce and egg white and mix well. Add dry ingredients and again mix well. Distribute evenly into muffin liners and bake for about 25 minutes.

    Two muffins count for one C3 fruit and one grain.

    I absolutely loved these! My family didn’t even know they were for my 17 day diet. The next time I make them I think I’ll add some poppy seeds for a little texture.

  2. I've done something similar with the oats in the past, of grinding them into flour; I like the muffin consistency quite well--different from what we're used to. Funny, as I just made a revision to the Oatmeal Cookie Muffins or Bars recipe by adding 3 bananas to it this weekend -- nice change!
