Mock Cinnamon Rolls (C1)

3 ounces fat-free cream cheese (cold)
3 large eggs
1/4 tsp cream of tartar
1/2 tsp vanilla extract
1/2 tsp ground cinnamon

Preheat oven to 350 degrees F.

Separate eggs. Put egg yolks in a bowl with cream cheese and set aside.

In another bowl, add egg whites and cream of tartar and whip (with an electric mixer) until stiff peaks. Clean off beaters.

Mix egg yolks and cream cheese, vanilla, and cinnamon.

With a spatula, fold the egg white mixture into the egg yolk / cream cheese mixture a little bit at a time; be careful to not break down the egg whites.

Line baking sheet with parchment paper and I spray it cooking spray not sure if its necessary.

Divide mixture into 6 mounds on the baking sheet

Bake for about 30 minutes (They should be soft, not crumbly).

Let them cool on the baking pan a few minutes, before topping with icing.

Frosting
1/2 scoop vanilla whey powder
3 packets truvia
6 oz fat free cream cheese
1/2t vanilla extract
2 Tbsp water (3 if you like it thinner)

The original recipe for rolls says to store in ziploc bag or can be frozen...not sure on the frozen part with these but must be stored air tight.

Without the frosting, the following is the nutritional breakdown (also assuming you're using fat-free cream cheese):

PER ROLL without the frosting):
Calories: 50
Fat: 2 grams
Protein: 5 grams
Carbs: 1 gram
Sugar: 1 gram

Note: 15 grams of carbs = 1 Natural Starch on the 17 Day Diet, but since these carbs are not from items on the Natural Starches list, they are not counted towards your starch nor are you limited to when you can eat them.

  2. Yes, fat-free, thanks Lauren. Fat-free cream cheese is allowed in Cycle 1: 2 Tbsp is one condiment-sized serving.
