Thin Mint Protein Poppers (C3)

4 scoops chocolate protein powder
2 Tbsp sugar free chocolate pudding powder
1/2 tsp mint extract
1/3 cup sugar equivalent sweetener
3/4 cup liquid egg whites or 4 egg whites
1/4 cup unsweetened almond milk
1/2 tsp baking powder

Bake at 350 for 9 minutes.  These are made in mini muffin tins. This makes 40 mini muffins/poppers.

I tried to cut down on the pudding mix and sugar in this one...they turned out good and serves their purpose to help with a binge on girl scout cookies.

To be posted later (once 17DDGal figures out the info on the pudding powder, as I have conflicting information).
