1 16-oz pkg chopped frozen spinach, thawed and drained
1 cup nonfat cottage cheese
2 egg whites
1 whole egg
3 Tbsp parmesan cheese
1/4 tsp salt
Thaw and drain the frozen spinach well. What I do is I use a salad spinner to get as much water out as possible, then I take the spinach and squeeze as much water out of it as I can; if you don't do this last part, then there is a possibility the pie/bake will be too wet.
Mix everything together and spread in a 9 inch round pie pan that has been sprayed with nonstick spray. Or, for a spinach bake, I put the mixture in an 8X8 baking pan. In addition to the ingredients listed above, I also put 1 cup of mushrooms into the mixture.
Bake @ 425 for 30 minutes, or until golden and bubbly.
Note:
Cottage cheese does not count towards your probiotic, as when baking it, the live active (probiotic) portion of the cottage cheese is killed off.
SO……going through the effort of finding live active cottage cheese isn’t really necessary. I (Simmie) just used nonfat or 1% cottage cheese and it comes out delish! Since cottage cheese doesn't come into the 17DD until C3, this is why this is a C3 recipe.
I modified what I ate in C1 and C2 to allow meals like this (on occasion) and counted the cottage cheese as protein, although this technically makes this non-cycle compliant for C1.
What I have not tried in order make this C1 compliant is to use nonfat feta cheese instead of the cottage cheese -- you would need something else to bring in some more moistness as the feta cheese by itself would not be good enough to accomplish this.
