Cauliflower Muffins (C1)

Yield: 6 small muffins

1/2 small to medium head of cauliflower
2 scallions
1/3 cup of reduced or no fat mozzarella
1 egg
1/2 teaspoon of baking soda
Seasoning: salt, pepper, cayenne pepper, dried cilantro, freshly ground coriander

Steam the cauliflower for about 30 minutes, then put it in the food processor with the rest of the ingredients and thoroughly mix it.

Spoon it into muffin tins that have been sprayed with a nonstick spray such as PAM.

Put in a 450 oven for 30 minutes -- double check them, as they may need some more time in the oven.

To keep your sodium lower, use baking powder instead of baking soda (they both are good for making baked products rise).

It makes 6 small, squishy ice hockey pucks type of muffins!
