This is a crockpot recipe!
Cooking Time: 7.5 hours
1 ½ lbs Your favorite lean stewing beef, well trimmed of fat and cut into ½” cubes
2 Tbsps olive oil
1 tsp salt
¼ tsp black pepper
3 cups potatoes, cubed
2 cups carrots, sliced
2 cups stewed tomatoes, low-sodium
½ cup celery, chopped
½ cup onions, diced
½ cup frozen corn
½ cup frozen cut green beans
½ cup frozen peas
Brown meat in oil in skillet. Add salt and pepper.
Place meat, potatoes, carrots, stewed tomatoes, celery, onions, corn and green beans in slow cooker (everything but the peas).
Add enough water to cover all ingredients.
Cover; simmer for 20 minutes.
Cook on high for 6 ½ to 7 hours.
One-half hour before the end of cooking time, stir in peas.

Notes: On the carbs, the high hitters other than the potatoes are tomatoes, carrots and corn. ALL are within limits.
