¼ cup grated Parmesan cheese
1 ½ cups Italian-herbed marinara sauce
1 Tbsp Olive oil
1 ½ lbs. Skinless boneless chicken breasts (about six)
1 ½ cups shredded part-skim mozzarella cheese (about 6 ounces)
Stir 3 Tbsp. Parmesan cheese into marinara sauce.
Heat oil in large skillet over medium-high heat. Add chicken and cook about 10 minutes or until browned.
Pour sauce mixture over chicken and cover.
Cook over medium heat 10 minutes or until chicken is no longer pink.
Top with mozzarella and remaining parmesan.
Let stand 5 minutes or until cheese melts.
