Simmie's Fried Chicken (C1)

Who says we can't have fried chicken on this diet? It just can't be breaded, but we can have fried chicken!!

4 Chicken breasts, skinless
4 Tbsp Lemon juice, fresh
3 Tbsp Extra virgin olive oil (divided with the next item)
2 tsp Extra virgin olive oil (divided with the above item)
1 tsp Salt, divided
½ tsp Oregano, ground
1/8 tsp Pepper

Directions:

In shallow dish, make marinade by mixing together:
Lemon juice
2 tablespoons of the olive oil
½ teaspoon of the salt
Oregano
Pepper

Add chicken, place in fridge and marinade, turning after 15 minutes, for at least 30 minutes. (I marinade for about 4 hours if I have time.)

Remove chicken from marinade and drain on paper towels; reserve marinade.

In large frying pan, place remaining 1 tablespoon olive oil and heat to medium temperature.

Add chicken and cook about 5 minutes on each side.

Reduce heat to medium-low, add reserved marinade; cover and cook (turning often) until golden brown and fork can be inserted in chicken with ease.
