Mock Pancakes (C1)

Make some "cauliflower rice" (put about 1/4 head of cauliflower in a food processor and pulse till all chopped up and looks like rice.) I did not cook cauliflower.
Put "rice" in a med bowl Add about 1/4- 1/2 C. egg beaters.
Stir in some: vanilla extract (about 1/2 -3/4 capful) and cinnamon to taste, 1 packet of Truvia and mix.
Pour into greased (with Pam or EVOO) pan and cook like a pancake. Turn gently!
Enjoy with sugar free syrup or top with fruit or melt some All Fruit jelly on top!
