Thai Chicken (C3)

2-4 boneless, skinless chicken breasts
1/3 cup salsa
1 Tbsp. lime juice
1/2Tbsp. light soy sauce
1/2 tsp. ginger root
1/8 tsp. black pepper
chopped cilantro and scallions

In medium bowl, combine ingredients; mix well. Pour this mixture over chicken. 

Put chicken in a pan sprayed with Pam and cook on low until chicken is thoroughly cooked.


  1. This sounds awesome. I will have to try it soon. Wonder what it would taste like with turkey?

  3. Where could I buy Ginger root? Is it in the produce section or is it dried?

  4. You can get ginger in powder form, or ginger root in dried form. It's in the chinese section in my grocery store; you might also try a health food store.

  5. You can get fresh ginger in the produce section or powdered dry ginger on the spice aisle at the grocery store. But the health food store might have a purer form.

  6. How long and at what temperature did you cook the meat?

    You can also get dried ginger root in the Hispanic spices area. It's the BEST place in the store to get your spices. They sell the same stuff as in the spice aisle at a fraction of the price.
