1/4 cup lime juice
1 teaspoon freshly grated lime rind
1 teaspoon fresh minced ginger
1 jalapeno pepper, seeded and finely minced
2 (6oz) salmon steaks
Whisk together lime rind, lime juice, oil, ginger, and jalapeno. Set aside a teaspoon of the mixture.
Place salmon steaks in a dish large enough to hold them. Pour the remaining juice over the salmon and turn to coat. Marinate at room temperature for 15 minutes, turning once.
Preheat grill to medium high and grease. Grill salmon turning once, until cooked through about 3 to 4 minutes on each side.
Move to a platter and pour the remaining lime mixture on top.
Serve with a side of your choice of vegetables.
Made this tonight and it was fantastic. My whole family loved it and my 8 yr old daughter wolfed it down. She even had seconds and thirds!! I would love more fish recipes on this site!
ReplyDeleteI'll see what we can't do about that! A lot of the recipes come from members of a Facebook Group that is quite active--I'll put out some "feelers" for some more fish recipes.
