Granola on the Run (C2)


This is a great recipe if you're in a rush -- the only prep required is grating the apple!

1 apple, unpeeled
1/2 cup thick lowfat plain greek yogurt
2 Tbsp raw almonds, chopped
1 cup old fashioned oatmeal/whole grain rolled oats

Grate the apple including the skin and put into a bowl.

Add the yogurt, nuts and oats and sweetener if you want it a little sweeter (the greek yogurt will not be sweet).

Serve as is on the side with your breakfast, or pour over other fruit such as berries or peaches.

NOTE:
This recipe uses 4 starch servings, so in one day you can use half of this recipe only, to satisfy both starch requirements on C2 days of C2, or any day in C3.
