Adapted from recipe on SparkPeople website
1 1/2 cups flour (whole wheat)
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/8 tsp salt
1/4 tsp vanilla
2 egg whites
1 cup mashed banana
3/4 cup sugar [substitute artificial sweetener for this]
1/4 cup applesauce
Combine banana, egg whites, applesauce, sugar substitute, vanilla, and cinnamon.
Add dry ingredients (flour, baking soda, baking powder, salt) until well mixed.
Pour batter into bread pan sprayed with cooking spray.
Bake at 350 degrees for 40-50 minutes or until toothpick inserted into the loaf comes out clean.
Some other options for this bread:
- Swap out the banana with pumpkin -- then add more spices! This would be C2.
- Make this into zucchini bread! This would still be a C3 recipe.
